From the Kitchen of Sarah McCullen
1 tablespoon butter
1 yellow onion, halved and thinly sliced
1 teaspoon honey
½ teaspoon salt
½ cup Greek yogurt
3 tablespoons mayonnaise
4 ounces cream cheese, softened
½ teaspoon garlic powder
1 tablespoon soy sauce
In a skillet over low heat, melt butter and add thinly sliced onions, honey and salt. Cover and saute, stirring every 1-2 minutes to keep onions from burning. Cook until onions are soft and caramel in color, about 10-12 minutes. Remove from heat and let cool. In a medium bowl, whisk yogurt, mayonnaise, cream cheese, garlic powder and soy sauce. Add caramelized onions and stir to combine. Serve with sliced carrots, cucumbers, celery and potato chips.
