Very Berry Mint Salad

This refreshing and sweet summer salad is perfect for outdoor get-togethers. It can be prepared beforehand; just wait to mix in the dressing until right before serving.

Recipe by Kimme Hargrove

  • Juice from 2 limes

  • Zest from 1 lime

  • 2/3 cup honey

  • 1/2 cup fresh mint, chopped

  • 2 cups each (any combination of these fruits or all of them can be used, and amounts can vary): Blueberries, Blackberries, Raspberries, Strawberries, quartered Watermelon - cut into 1-inch cubes

Combine lime juice, lime zest, honey and fresh mint in a container with a secure lid, such as a Mason jar, and shake vigorously.

Just before serving, pour dressing over fruit, and stir gently until combined.
