Dress up a simple and fresh summer salad with just a handful of ingredients. This dressing works great over a salad of spinach, mandarin oranges and avocado. Add green onions and toasted almonds to spice things up a bit.

2-3 cloves garlic, minced
¼ cup rice wine vinegar
2 tablespoons sugar
1 tablespoon fresh ginger, grated (or use refrigerated ginger paste)
¼ cup olive oil
Salt and pepper, to taste
Mix first four ingredients in a small bowl, then slowly whisk in oil until all is combined and sugar is dissolved. Add salt and pepper to taste. Or, to make it even easier, place all ingredients in a small Mason jar, and shake vigorously to combine. Toss salad ingredients with dressing, and serve.
