This savory main dish turns any dinner into a special occasion. Topping the roasted pork with whole roasted garlic before serving makes it over-the-top delicious!

3½-4½ pound pork loin roast (do not trim)
2 tablespoons olive oil
2 onions, roughly chopped

Heat oven to 425°F.
Pour olive oil in a roasting pan large enough to fit the pork loin. Liberally rub salt and pepper on all sides of the pork loin, and place it in the pan. Surround pork loin with chopped onion.
Roast for 80-90 minutes, until the internal temperature reached 140-145°F. Remove from oven, cover pan with foil, and let rest for 15 minutes.
Slice thin and serve with the juices, onions and whole roasted garlic spooned over the top.
