Rice Pudding

Try this sweet solution for leftover rice — even leftover Chinese take-out rice works beautifully in this recipe.

  • 3 eggs, beaten

  • 2 cups milk

  • ¾ cup sugar

  • 1 teaspoon vanilla

  • ½ teaspoon salt

  • ¼-½ cup raisins (golden or black), if desired

  • ¼ teaspoon nutmeg, if desired

  • 2 cups cooked white rice

Heat oven to 325°F. In a large bowl, combine all ingredients except the rice. Stir in rice, until evenly distributed. Pour mixture into a baking dish, and cook for 30-40 minutes or until a knife comes out clean in the middle.
