This is an incredibly versatile sauce to use with whatever you have on hand. Make it your way with your ingredients of choice.
1 tablespoon Flavored Olive Oil (Food Blog recipe featured on June 26)
1 bell pepper (any color), diced
1 green onion, chopped
3-4 cloves garlic, minced
1/4 cup white wine
1/4 cup heavy cream (half & half works too)
1/4 cup shredded or grated Parmesan cheese
1-2 tablespoons chicken stock or water, for thinning
Salt and pepper to taste
Heat olive oil over medium heat in a medium sauce pan. Add bell pepper, onion and garlic. Sauté 5-7 minutes until softened.
Add white wine and reduce by half. Lower heat and add cream, stirring until combined. Add Parmesan cheese and remove from heat. Add chicken stock or water by the tablespoon if too thick. Salt and pepper to taste.
Use sauce for pasta or protein of choice.
