Make your own pancake mix, and keep it in the pantry for quick breakfasts or lunches that will make the whole family happy, especially when you use it for these adorable pancake bites that are great for breakfast or a snack anytime of day.

Dry Pancake Mix
4 cups all-purpose flour
3 tablespoons baking powder
3 tablespoons sugar
2 teaspoons baking soda
1 teaspoon salt
Mix all ingredients together, and store in airtight container in the pantry.
1 cup pancake mix (recipe above)
1 egg, slightly beaten
1 cup milk
1 tablespoon canola or vegetable oil
In a large bowl, mix ingredients together, and stir until combined. Make traditional pancakes, or follow directions below to use the batter in pancake bites.
Prepared pancake batter (follow recipe above or use store-bought)
Toppings of choice: fresh fruit (such as chopped bananas, strawberries, blueberries), chocolate chips, sprinkles
Heat oven to 350°F.
Spray a mini-muffin pan with non-stick cooking spray.
Fill muffin tins slightly more than halfway full with batter. Sprinkle toppings of choice on top of batter.
Bake 15-20 minutes until edges are slightly browned. Cool slightly, and enjoy!
