Late Autumn Apple Salad With Honey-Shallot Vinaigrette

Winter is not here quite yet! Celebrate the last days of fall with this perfectly seasonal salad. Serve it as a side, or add sliced grilled chicken breast over the top to make it a complete dinner.


4 tablespoons canola oil

2 tablespoons cider vinegar

2 tablespoons shallots, minced

1 tablespoon Dijon mustard

1 tablespoon honey

Salt and pepper, to taste

1-2 apples, chopped into bite-sized pieces

Lettuce of choice

Goat cheese, crumbled

Walnuts, chopped


In a mason jar, shake together oil, vinegar, shallots, Dijon, honey, salt and pepper. Add chopped apples to the container, and shake again to combine flavors and to keep apples from turning brown.


Pour dressing and apples over your favorite type of lettuce, and top with crumbled goat cheese and walnuts.
