Homemade Granola

Make your own sweet and crunchy granola for a special yogurt or cereal topping.

4 cups rolled oats (not instant)

1 cup sliced almonds

½ cup light brown sugar

¼ cup honey

2 tablespoons water

1½ teaspoons cinnamon

½ teaspoon nutmeg

½ teaspoon salt

1 teaspoon vanilla

¼ teaspoon baking soda

1-2 cups dried cranberries or raisins

Heat oven to 350°F. Line a large baking sheet with parchment paper.

In a large bowl, mix oats and almonds, and set aside.

In a small saucepan, mix together brown sugar, honey, water, cinnamon, nutmeg and salt. Bring to a low boil, and whisk frequently, for about 1 minute. Remove from heat. Add vanilla and baking soda, whisking until foam subsides.

Carefully pour hot mixture over oat and almond mixture, and toss to coat. Spread mixture evenly over lined baking sheet. Bake for 40-50 minutes, checking and stirring regularly, until golden brown and crispy. After removing from oven, add dried fruit and toss to incorporate. Let cool before eating.

Keeps well for weeks in an airtight container.
