Holiday Gaucamole

When Invitation Magazines food blogger Lauren McElwain is craving guacamole, she relies on her husband, Lucas McElwain. He came up with this recipe, which incorporates sun-dried tomatoes and pomegranate seeds to make it festive for the holiday season. Serve with blue corn chips for a beautiful color contrast.

Recipe by Lucas McElwain

4 ripe avocados

2 large garlic cloves, minced

3 tablespoons minced red onion

2 tablespoons minced sun-dried tomatoes

Juice of half a lime

2 tablespoons minced cilantro

½ teaspoon cumin

Cayenne pepper, to taste

Sea salt, to taste

¼ cup pomegranate seeds (or more) for garnish

Peel the avocados, place in a decorative bowl, and mash. Add the rest of the ingredients through sea salt, and stir. Sprinkle pomegranate seeds over the top. Serve with blue corn chips.
