Flavored Olive Oil
This recipe is a ‘guide.’ Use whatever fresh herbs you have in any combination for a fantastic olive oil base to kickstart your favorite dishes.
1/4 cup olive oil
2 stems fresh basil
2 stems fresh oregano
2 stems fresh rosemary
4-6 stems fresh parsley
Place full stems/leaves in olive oil in a tall-sided sauté pan. Heat on medium low, stirring a couple of times, for about 10 minutes until the leaves are slightly crispy.
Remove stems, tearing/breaking off the crisp leaves. Use the flavored olive oil to begin any of your favorite dishes.
Easy Marinara Sauce
2 tablespoons flavored olive oil
1 onion, chopped
3-4 cloves garlic, minced
1 28-ounce can crushed tomatoes
1/4 cup heavy cream (half & half works too)
Salt and pepper to taste
**Optional: Fresh herbs chopped and added just before taking off of heat
**Optional: 1/4 teaspoon crushed red pepper for spice
Heat olive oil on medium heat in a sauté pan. Add onion and garlic and cook 5-7 minutes until onions are mostly softened, stirring a few times to prevent garlic from burning.
Add tomatoes and simmer on medium-low for 20-30 minutes until reduced and thickened.
Stir in cream (and chopped fresh herbs of choice). Take off the heat until ready to use as sauce for pasta or on protein of choice. Use salt and pepper to taste. Add crushed red pepper if you enjoy a little kick!
