Try this creamy and satisfying side dish with grilled steak or chicken.

3 tablespoons butter
2 tablespoons minced red onion
3-4 cloves minced garlic
2 packages frozen spinach (thawed, rinsed and drained)
8 ounces cream cheese
½ cup shredded mozzarella
8 ounces crumbled feta
½ teaspoon nutmeg
½ to 1 teaspoon red pepper flakes
Salt and pepper, to taste
Melt the butter in a pan or cast iron skillet over medium heat. Add the onions and garlic, and cook, stirring, for 1-2 minutes.
Add the spinach, and toss to coat with the melted butter mixture. Add the cream cheese, and cook, stirring, until fully melted and incorporated, about 5 minutes. Add the rest of the ingredients, and cook, stirring, for 5-7 more minutes or until all cheeses are melted and incorporated.
Transfer to an attractive serving dish or leave in the cast iron skillet, and serve hot.
