This easy weeknight dinner comes together quickly with only a few ingredients. Top with fresh herbs or green onion, and serve with a green salad or vegetable to complete the meal.

Two Ingredient Baked Chicken
4 chicken thighs
Heat oven to 325°F.
Liberally sprinkle chicken with seasoning.
Place chicken on wire rack over a baking sheet lined with foil (lining the baking sheet with foil isn’t necessary, but it helps to make clean up even easier!)
Bake for at least 1 hour, then check crispiness and continue to bake in 10-minute increments (up to 20 minutes more) until extra crispy.
1 can beef consomme soup
¾ cup uncooked white rice (not instant)
½ stick of butter
Heat oven to 350°F.
Mix all ingredients together in casserole dish.
Cover, and bake for 35 minutes. Stir, and bake for an additional 10 minutes
