Almond Flour Chocolate Chip Cookies

These gluten-free goodies are a healthier alternative to the classic weekend treat or after-school snack.

  • 2 tablespoons ghee

  • 2 tablespoons coconut oil

  • ½ cup light brown sugar

  • 1 egg

  • 1 tablespoon almond butter

  • ½ teaspoon salt

  • ½ teaspoon cinnamon

  • ½ teaspoon vanilla extract

  • ¼ teaspoon baking powder

  • 1½ cups almond flour

  • ¾ cup dark chocolate chips

  • Coarse sea salt, optional

Heat oven to 350°F. In a large bowl, melt the ghee and coconut oil. Add brown sugar and combine well. Add egg and almond butter, whipping mixture with a fork until slightly frothy. Add salt, cinnamon, vanilla, baking powder and almond flour. Stir until well combined. Roughly chop the chocolate chips and add to dough, mixing well. Using a cookie scoop, scoop dough and place on cookie sheet. Sprinkle with sea salt if desired. Bake for 12-15 minutes.
